i came across this recipe a while back on pinterest, and ever since the first time i made it, axel has been requesting it weekly. the other day i made a double batch and, let me tell you, it is delicious for breakfast with milk, in yogurt (coconut is my favorite!), or just as a much needed chocolatey snack any time of day. as with any granola, your own seeds and nuts can be added, so i switched up the recipe a bit for our family. beware: it is delicious and filled with rich chocolate flavor.

CHOCOLATE GRANOLA (adapted from here)

4 cups rolled oats
1 cup unsweetened coconut flakes
½ cup almonds
½ cup pecans
½ fine sea salt
½ cup unsweetened cocoa powder
⅓ cup melted coconut oil
½ tsp vanilla extract
⅓ cup honey
¼ cup light brown sugar
⅓ cup dark chocolate, coarsely chopped

Preheat your oven to 325°. Mix together rolled oats, coconut flakes, almonds, pecans, and salt. In a separate bowl, whisk the cocoa powder, coconut oil, vanilla, honey, and brown sugar. Toss together the oats with the cocoa mixture, and coat well (I use my hands), until the oats are covered completely with the cocoa.

Evenly distribute the coated oats onto a parchment lined baking sheet. Bake for 15 minutes, remove from oven and gently stir. Place oats back into oven for another 10-15 minutes. Be careful to not overbake or they will burn. When the granola is done, remove from oven (it will continue to crisp as it cools) and carefully stir in your chopped chocolate. It will melt into the granola, and some pieces will stay clumpy. Store in a jar on your countertop for continuous snacking. Enjoy!
